We offer fully automatic, continuous lines for the production and drying of short-cut pasta to all pasta factories.

These lines have been engineered and manufactured to meet all the producers’ requirements for functional capacity, simplicity and quality of the artisanal plant to be part of a more industrial and automated project that still retains a very valid quality-to-price ratio.

Technical and technological specifications of the machines making up the line:

  • Single-screw extruder equipped with patented centrifuge and vacuum mixer for feeding of the screw.
  • Pre-dryer by five vibrating tiers: stainless steel structure, looms and paneling that can be easily opened and cleaned. Heating system by winged heat exchangers running either by hot or overheated water, served by axial electro-ventilators suitable for treatment temperature up to 80°С.
  • Continuous dryer featuring mats in thermo-resistant, polyester mesh made up of two technological areas equipped with independent climate control probes; pre-drying, drying and stabilization areas. The paneling that can be fully opened all along the machine perimeter is made up of AISI 304 stainless steel panels with internal insulation by 20 mm rock wool and injection of high-density polyurethane thus totaling 60 mm total thickness.
  • The mats in thermo-resistant, polyester mesh by 1700 mm usable width supported by stainless steel bars and chains are equipped with independent, variable-speed gear motor that is controlled by the inverter from the main line control panel.
  • The loading and distribution device of the product onto the drying mat is made up of a light metal structure and stainless steel mesh driven by eccentric mass motor-vibrators by adjustable intensity.
  • The heating groups are made of winged exchangers running either by hot or overheated water, served by axial electro-ventilators suitable for high temperatures.
  • The air exchange group is made by inlet and exhaust piping and proportional opening valve that is fully in stainless steel.
  • Ambient air cooler served by high-performance axial fans or upon demand by Freon evaporators or glycol water running exchangers. Transport of the product is effected on polyester mat driven by variable speed, independent gear motor
  • Electric control panel equipped with PLC and color touch-screen, enabling  software integration with PC controlled, supervision system.

  • Sturdy structure in painted stainless steel with AISI 304 stainless steel safety guards.
  • System of automatic feeding and removing of sticks with double chain and fastening nibs.
  • Cogged belts for the product transfer inside the cutting device.
  • Cutting device by double counter-placed rotatory blades, easily dismountable for maintenance and cleaning operations;
  • Centrifugal fan for conveying the scraps into the collection basket.

Pre-arranged for functioning with special high speed blades for special shapes.

Automatic sheeter to continuously feed moulding machines of ravioli and cappelletti and automatic cutting machines

The machine has been designed and manufactured to continuously feed the ravioli and cappelletti and cutting machines. The rolling shafts and cylinders are set horizontally. The particular opening of the shutters allow an accurate cleaning process of the inside parts that can be carried out in maximum safety conditions for the operator. The laminating-shaft group is equipped with distanced mechanics. All parts in contact with the product are in stainless steel AISI 304.

The double-basin model operates autonomously, since it is equipped with mixing basin of various capacities dependig on the model.
Transfer of the dough from the upper to the lower basin occurs thanks to a pneumatic tilting device.

Also a single-basin model is available, ideal for coupling with a continuous mixer and to be part of continuous production lines.

Made in stainless steel it is particularly suitable to be used in production lines of fresh pasta coupled with automatic sheeters or extruders for lasagne or tagliatelle production.
It can also be used coupled with cookers for lasagne and pre-cooked cannelloni in cooking lines.
The refining rollers can be made in ground steel or in thickness-chromed iron, they feature variable diameter depending on models and width and are equipped with scrapers in teflon-coated brass, taking into consideration the large variety of models.

Suitable for cutting of long pasta, lasagne and “quadrucci” (soup pasta in small square shape). Mould support in anodized aluminium, structure made in sturdy tubular, stainless steel fitted upon wheels.

  • Adjustable, sheet-opening support with matching roller.
  • Motorization group for moulds equipped with independent motorizations by electronic speed variator.

  • Electric control panel made up of stainless steel casing, insulation IP55,  fitted on board of the machine, equipped with multi-revolutions potentiometer enabling to adjust synchronization speeds.

Stainless steel version available

Suitable for continuous productions; fully automatic running controlled by PLC with relevant keyboard enables moulding of nests of the desired dimensions, shapes and lengths, as well as lasagne, automatically spread onto the drying looms and obtained either from laminated sheet pasta or from a pasta die; width of sheet mms. 510 (upon demand up to mms. 540).

Upon demand the machine can be equipped with the following:

  • Laminating unit for adjustment of sheet-pasta thickness, made up of couple of chromed, ground rollers
  • Automatic loom-feeding device featuring output of 8 pcs. looms cms. 60x120 with automatic loom-forwarding
  • Loom support after moulding, equipped with pre-drying fans
  • Equipped with electronic speed variator suitable for direct coupling with sheeter or extruder.

Technical features of Nesting machine:

  • Interchangeable cutting groups
  • Pneumatic system of tube lifting for nest moulding of various sizes (upon demand)
  • Cross cutting group made up of temporised blade for determination of tagliatelle length, synchronised with loom-forwarding device.

Technical features of Lasagne machine:

  • Longitudinal cutting group made up of adjustable-position rotative blades for determination of lasagna width and side trimming
  • Cross cutting group made up of temporised blade for determination of lasagne length, synchronized with loom-forwarding device.

Equipment supplied upon demand:

  • Special version with expanding cone for production of flat-, round-, oval-, waved-section nests (e.g. “reginette”) obtained from pasta die
  • Special version in stainless steel with direct discharge onto the pasteuriser net for production of fresh, nest-shaped “tagliatelle”.

Treatment is effected by means of "microperforated plates" device ensuring maximum penetration of heat and treatment homogeneity. High performance and energy-saving are ensured by innovative design and excellent insulation

Entirely made in stainless steel, fully dismountable for easy internal cleaning to ensure absolute hygiene. The 6-cm. thick, stainless steel panelling is thermally insulated, ensuring maximum thermal insulation to avoid heating up of the working environment, energy saving and total safety for the operators. 

The pasteurization treatment is obtained by means of the revolutionary system of “MICROPERFORATED PLATES” located above the pasteurizer that uniformly envelop the product in a jet of steam, ensuring maximum heat penetration and omogeneity of treatment.
This pasta machine can operate either with saturated or overheated steam. 

  • The saturated steam supplied by an external generator performs traditional pasteurization and constant treatment temperature ensures even pasteurization without condensations.
  • Operating by overheated steam, this machine is the ideal choice for a modern company, sensitive to those hygienical and safety regulations, which make the difference today. Pasteurization is effected by an air/steam mixture overhated up to over 300°C while temperature inside the pasteurization chamber reaches over 100°C. This new technology enables to reach 80-90°C at core of the product in a very short time while keeping its organoleptic qualities unchanged.
  • Thus the product remains stable and dry. Output depends on length of the pasteurization chamber, type of steam used and type of product to be treated: size, thickness, total umidity.

Available customizations:

  • Belt in special polyester net suitable for high temperatures, used to avoid leaving those marks on the product surface which remain when using stainless steel net.

Pasta machine built in stainless steel, equipped with water heating system by means of heat exchanger.

Scope of the heat exchanger working at 6 Bar saturated steam is to ensure constant and homogeneous cooking temperature inside the basin well over 98°C, so as to avoid fitting of internal coils, which could make it difficult to carry out washing operations at the end of the working day.

  • Suitable for cooking of bulk products, short pasta, ravioli, tortellini, spaghetti, etc. as well as sheet pasta for lasagne and cannelloni. Equipped with a conveyor belt made in alimentary polypropylene and stainless steel, running in two modes: impulse running for bulk products; continuous running for sheet pasta with automatic increase of water-level..
  • All the machines can be equipped with automatic device for lid lifting and conveyor mat.
  • The PLC fitted on the control panel equipped with software program studied by ITALPAST enables total control of the machine, automatically regulating cooking time, speed, water-levels and synchronization with the conveyor belts or the machinery that might be placed before/after the cooker.

The pasta pasteurization process has been developed and refined by Italpast for the big fresh and filled pasta production lines of the industrial type.

The pasteurization treatment for fresh pasta is obtained by saturated steam, generated inside the machine itself directly below the conveyor belt, which is equipped with stainless steel net.

  • The evaporation basin can be heated up by liquid gas or methan gas (model PA /G) or by electrical heating elements (model PA /E). The pasta machine design is very compact, so as to enable use in the smallest possible rooms; also, the machine is easily accessible for washing and cleaning operations. 
  • All panelling is made in stainless steel. 
  • Quartz lamps and fans are installed after the pasteurisation basin to pre-dry the product after pasteurisation. The main motor-drive is equipped with mechanical speed variator enabling variation of the pasteurization time.
