Fresh pasta cooking and pasteurization

Treatment is effected by means of "microperforated plates" device ensuring maximum penetration of heat and treatment homogeneity. High performance and energy-saving are ensured by innovative design and excellent insulation

Entirely made in stainless steel, fully dismountable for easy internal cleaning to ensure absolute hygiene. The 6-cm. thick, stainless steel panelling is thermally insulated, ensuring maximum thermal insulation to avoid heating up of the working environment, energy saving and total safety for the operators. 

The pasteurization treatment is obtained by means of the revolutionary system of “MICROPERFORATED PLATES” located above the pasteurizer that uniformly envelop the product in a jet of steam, ensuring maximum heat penetration and omogeneity of treatment.
This pasta machine can operate either with saturated or overheated steam. 

  • The saturated steam supplied by an external generator performs traditional pasteurization and constant treatment temperature ensures even pasteurization without condensations.
  • Operating by overheated steam, this machine is the ideal choice for a modern company, sensitive to those hygienical and safety regulations, which make the difference today. Pasteurization is effected by an air/steam mixture overhated up to over 300°C while temperature inside the pasteurization chamber reaches over 100°C. This new technology enables to reach 80-90°C at core of the product in a very short time while keeping its organoleptic qualities unchanged.
  • Thus the product remains stable and dry. Output depends on length of the pasteurization chamber, type of steam used and type of product to be treated: size, thickness, total umidity.

Available customizations:

  • Belt in special polyester net suitable for high temperatures, used to avoid leaving those marks on the product surface which remain when using stainless steel net.

Pasta machine built in stainless steel, equipped with water heating system by means of heat exchanger.

Scope of the heat exchanger working at 6 Bar saturated steam is to ensure constant and homogeneous cooking temperature inside the basin well over 98°C, so as to avoid fitting of internal coils, which could make it difficult to carry out washing operations at the end of the working day.

  • Suitable for cooking of bulk products, short pasta, ravioli, tortellini, spaghetti, etc. as well as sheet pasta for lasagne and cannelloni. Equipped with a conveyor belt made in alimentary polypropylene and stainless steel, running in two modes: impulse running for bulk products; continuous running for sheet pasta with automatic increase of water-level..
  • All the machines can be equipped with automatic device for lid lifting and conveyor mat.
  • The PLC fitted on the control panel equipped with software program studied by ITALPAST enables total control of the machine, automatically regulating cooking time, speed, water-levels and synchronization with the conveyor belts or the machinery that might be placed before/after the cooker.

The pasta pasteurization process has been developed and refined by Italpast for the big fresh and filled pasta production lines of the industrial type.

The pasteurization treatment for fresh pasta is obtained by saturated steam, generated inside the machine itself directly below the conveyor belt, which is equipped with stainless steel net.

  • The evaporation basin can be heated up by liquid gas or methan gas (model PA /G) or by electrical heating elements (model PA /E). The pasta machine design is very compact, so as to enable use in the smallest possible rooms; also, the machine is easily accessible for washing and cleaning operations. 
  • All panelling is made in stainless steel. 
  • Quartz lamps and fans are installed after the pasteurisation basin to pre-dry the product after pasteurisation. The main motor-drive is equipped with mechanical speed variator enabling variation of the pasteurization time.

Pasta machine featuring new conception and high technology, ideal for large industries needing to exploit room in the best way possible in favour of high outputs. 

Running exclusively by overheated steam the pasta machine compact structure further improves the already proven efficiency of the SC models. From one up to three pre-drying tiers running by hot air can be added to the two pasteurization tiers, thus enabling to obtain final product ready for the cooling or packaging phase.

Output depends only on length of the pasteurization chamber (“L”) and on the kind of product to be treated: dimensions, thickness, total humidity. Due to the high temperature the belts dedicated to pasteurization are made up of stainless steel net and side driving chain. Belts in polyester net and side driving chains or sector-shaped belt in polypropylene are used in the drying area.
