Vacuum pasta extruders

Exact answer to all experimental tests in labs of medium and large industries. Here are some examples of checks and applications:

  • testing hydration of flours depending on different recipes, temperatures and speeds;

The Extruder can simulate and detect any details concerning the following phases:

  • MIXING AND HYDRATION OF THE RAW MATERIALS with control of temperature of dough  thanks to independent thermostatation circuit, control of mixing shaft speed (completely dismountable for cleaning and washing operations).
  • COMPRESSION by single-screw group in stainless steel, independent thermostatation circuit of the extrusion cylinder, independent thermostatation circuit of the extrusion head, control of compression screw speed, control of pressure inside the extrusion head.

To obtain fully automated, continuous production we have engineered this Extruder equipped with Centrifuge Pre-Mixer

Pasta machine engineered on the basis of the consolidated experience and reliability of model MAC 100 - MAC 180, onto which a centrifuge pre-mixer of new conception has been fitted so as to obtain fully automated, continuous production. The pre-mixer enables homogeneous mixing of all ingredients making up the dough, which then undergoes hydration and extrusion. Particularly suitable for production of superior quality pasta, to be part of production lines for short and long pasta.

The models equipped with speed variator are especially suitable for production of sheet pasta in direct coupling with forming machines for ravioli, cappelletti, etc.
Model MAC120C-200 is equipped with head suitable for pasta die diam. 200, pressure control device and electronic speed variator for the extrusion screw.

Model equipped with the following:

  • structure entirely made in stainless steel;
  • volumetric doser for flour;
  • dosing pump for liquids;
  • centrifuge pre-mixer with dismountable blades;
  • extrusion cylinder with cofferdam for water cooling;
  • adjustable speed pasta-cutting unit with relevant knives.

Essential for fitting onto continuous mixers to obtain high performances

ITALPAST has developed the concept of PRE-MIXER to amalgamate and homogeneously mix all ingredients making up the dough to reach even distribution of the liquids used to wet flour during the subsequent mixing phase. Besides improving the dough mixtures, something which has been tested first in our lab experimentally and then from a practical point of view during production, another great advantage of the pre-mixer T300 are functional capacity and efficiency while cleaning and sanitization operations are carried out.

Machine entirely built in stainless steel, equipped with the following devices:

  • Flour collection hopper complete with safety levels and beater
  • Volumetric doser of flour by precision endless screw in stainless steel
  • Volumetric dosage of water/liquids
  • Pre-mixing cylinder with transfer endless screw, fully dismountable for washing
  • Main cylinder for centrifuge mixing complete with shaft equipped with blades that are dismountable for washing

The consolidated experiences with models MAC-320 was renovated together with the patented centrifugal pre-mixing technology. The result is this more than 320 kgs per hour producing unit, which is continuous and producing superior quality pasta (short, long or sheet pasta).  The MAC-320 VRC version is suitable for production of short pasta with round vertical head.

The new series of Extruders model MAC4000 has been engineered and manufactured by highly technological series equipment, thus being particularly suitable for the production of special shapes of high quality pasta. The fully automatic and independent Extruder is equipped with all components required for running on board of the machine, among which Cooling plant by closed-loop temperature-control system, vacuum pump and electric control panel. The Extruders are equipped with reliable and modern components connected to a running-friendly electronics but they also keep all those traditional processes unchanged that enable to obtain really high quality product. This can be obtained thanks to use of a proper and exclusive, patented Centrifuge pre-mixer, double mixing basin enabling sufficient hydration times and compression screw made by variable geometry, special profiling.
