Milk processing and

The module is designed to drain the liquid (whey or washing water) from the cheese grain(curd). It is used in the manufacturing of cottage cheese. DONI®Drainer CCH is fully closed, and requires СIP cleaning. DONI®Drainer CCH contains perforated, rotating cylinder with an integrated tubular screw line for grain (curd) transportation. The curd-whey mixture is fed from the back and the drained grain comes out of the front

The module is designed for coagulation, single stroke lengthwise and crosswise cutting in regular cubes and curd processing. The modification SC is specifically developed for the manufacturing of soft cheeses. DONI®O Vat SC is a horizontal vat with a filling capacity of 45%. It is supplied with two cutting tools, a lengthwise for two sides cutting and a crosswise for four sides cutting. They can create regular size cubes in a single stroke. Following cutting the lengthwise cutter stops at one end and the crosswise cutter goes into the unfilled empty space. The stirring tool goes into the curd-whey mixture. The technological process for the stabilising of the protein grain continues. The crosswise cutting tool is made of welded stainless strings and depending on the type of cheese being produced they are positioned at a distance of 10mm to 20mm from one another. The lengthwise cutting tool has very sharp knives positioned at the same distance from one another. The module is also supplied with: Two manholes with internal lighting, spray balls connected with a collector, a temperature sensor installed in the stirring tool, level sensors and a control panel corresponding to the required level of automation. If required heating elements can be installed.

The module is designed for coagulation, single stroke lengthwise and crosswise cutting of regular cubes and processing of manufactured grain. The modification CCH is specifically developed for the manufacturing of soft cheeses /cottage cheese and high quality tvorog Tradition/.
DONI®O Vat CCH is a horizontal vat with a filling capacity of 45%. It is supplied with two cutting tools, a lengthwise one for four sides cutting and a crosswise for two sides cutting. They make uniform cubes in a single stroke, then the lengthwise cutter stops in a specifically designed area minimising the losses occurring due to the cheese dust and the crosswise cutter goes into the unfilled empty space. The stirring tool enters the curd-whey mixture and the technological process for stabilising the protein grain continues. The cutting tools are made from stainless strings welded at a distance of between 8 to 14 mm from one another depending on the milk's protein content. The module is also supplied with: two manholes with internal lighting; spray balls connected with a collector; a temperature sensor installed in the stirring tool; level sensors; a system for heating and a control panel corresponding to the required level of automation. DONI®Double O Vat HC is a vertical double 'O' shape cheese vat. It is supplied with two reversible cutting-stirring tools. The walls and bases are fitted with heating elements (a jacket). The base is double cone shaped with two valves connected with a collector.
The module is also supplied with: a manhole with internal lighting, spray balls connected with a collector, a temperature sensor installed in one of the cutting-stirring tool, level sensors, soft heating system and a control panel corresponding to the required level of automation.

The solutions in the storage tank have to be prepared before the work begins. The preparation is done through the recirculation line and includes: Increasing the solutions temperature to 45 – 50 °С and adding detergents until the necessary concentration in the storage tanks is reached.

It has a rotary pump, a balance tank, a plate or tubular heat exchanger and sensors for conductivity, temperature, flow and pressure. The quality of the washing depends on: The time the mould stays in the washing zone, the use of correct detergents, the temperature, the nozzles positions and the flow velocity (speed) created by them. DONIDO's module creates the best conditions for the correct running of the process.
DONIDO® offers two different models of DONI®Washmatic. The design choice depends on the ratio (correlation) between the holding time which guarantees quality washing and the necessary linear velocity of the moulds which has to correspond to the linear velocity of the other modules on the line. The washing is carried out in separate zones: preliminary washing, main washing, rinsing and disinfection.
