The company was founded 1990 in Haskovo, Bulgaria with the idea to develop as a producer of equipment for the dairy industry.
The first equipment produced by DONIDO® is a pasteurizer for a dairy factory.
The first production line, created a year later was for production of the traditiona l for Bulgaria white cheese. Two years later the young company invested in two milk processing factories, where it experimented its new products, and developed new technologies. Through the years, with quick steps, DONIDO® is entering in all technological processes of the dairy industry, combining the best traditions of the old cheese makers with the newest technologies.
DONIDO® is the biggest producer of equipment and lines for the dairy industry in Bulgaria.
With its consecutive development policy and the proposed solutions we became a gold standard for the industry. The trademark DONIDO® is present in almost every Bulgarian dairy company.
There are 150 highly qualified specialists in the company, who are working in all the different fields of the whole technological process.

Module for the stacking of block moulds The module is a chain system for the placing of block moulds in a stack that is transported for further processing. DONI Stifmat is fully automated and operates in combination with a feeding conveyor belt. The full stack is placed on a conveyor belt or a transportation trolley. The design of the module depends on the size of the block mould and the number in the stack.

The module is designed for 180° rotation of full block moulds. It consists of a frame and a rotating container with two-sided pressing of the block mould.

The module is part of a transportation system in the automated production line of soft cheese. It is built-in behind the washing tunnel. It prepares the block moulds for filling by rotating it by 180°. DONI®Rotoform is a chain conveyor belt with a rotating frame installed on it. When the block mould enters the jaws of the frame it is rotated by 180° and then it continues along the conveyor belt.

The module is designed for the rotating of stacks of full block moulds. The main aim of this process is the final draining of the whey and the two sided shaping of the product in the mould. DONI®Rotomatic has pneumatic jaws and the stack is pressed between them. The block moulds are supported by stops sited on the sides. The moulds are rotated 180° and this is performed either manually or automatically. The module is designed in accordance to the size of the block moulds and the admissible height of the stack.

The module is a transport trolley with five stacks. It is designed to transport full and empty moulds and block moulds around the production sector and refrigeration chambers. DONI®Transcarriage is often used to organise the refrigeration rooms for maturing and for storage.

DONI®Transist C is designed to transport products that require a hygienic environment. It is fully closed and designed for CIP cleaning. The module is designed on an individual basis according to the requirements of the technological process and it connects the separate modules that participate in the manufacturing process.

The Module is designed for cleaning in a closed line with circulation through a balance tank. It has three main programs plus an extra additional special program used in cases of bacteriophage. The cleaning is fully automated and requires a high level of automation in the production sectors /HLA/. Cleaning systems with up to 6 integrated modules can be constructed with DONI®Pro CIP A. Every module services 16 lines in 24 hours. Individual parameters are set for each line. They depend on the type of contamination. Cleaning of two or more lines at a time can be performed if there is sufficient output and pressure. Circulation through balance tank saves energy and detergents because it heats only the volume necessary for the specific line and maintains optimal concentration corresponding to the contamination of the surfaces. Small volumes and very dirty cleaning solutions are diverted for neutralisation and disposal.
The parameters: time, concentration, temperature and flow are recorded and individually regulated for each line. DONI®Pro CIP A is compact, installed on a platform and hydraulically tested in factory conditions. It has a centrifugal pump, a balance tank, a plate or tubular heat exchanger, sensors for conductivity, temperature, flow and pressure, automatic regulating and shut-off valves for steam, dosing pumps for cleaning solutions and disinfectants, sanitary electropneumatic valves for flow control, control panel.

The quality of the washing depends on: The time the mould stays in the washing zone, the use of correct detergents, the temperature, the nozzles positions and the flow velocity (speed) created by them. DONIDO's module creates the best conditions for the correct running of the process.
DONIDO® offers two different models of DONI®Washmatic. The design choice depends on the ratio (correlation) between the holding time which guarantees quality washing and the necessary linear velocity of the moulds which has to correspond to the linear velocity of the other modules on the line. The module is designed for the brining of curd in the manufacturing of cheese with grainy structure. Inhibiting action on the development of the microflora is not observed during the preliminary brining (salt content of 0.5% to 0.7%). Meanwhile the time spent in the brine baths is significantly reduced, which accelerates the brining process and reduces the quantity and the volume in the brine baths.
Thanks to DONI®Drain/Brine the practice of partial brining in the cheese vat which generates up to 60% of salty whey is avoided. The process of whey desalting is very complex. DONI®Drain/Brine consists of two draining drums, connected with a U-tube where the curd stays in brine to absorb the necessary quantity of salt. The whey is drained in the first drum and the brine is drained in the second one.
The salt concentration in the brine is maintained automatically. Before the beginning of the process it is pasteurised and cooled down to 40°С.

DONI®Hotmix Topup is designed for the production of different types of processed cheese with higher viscosity. The main ingredient (crumbled cheese) and additives are added through the upper lid. The finished product is discharged through a valve at the elliptical bottom. The mixture is heated indirectly. The unit has a double wall filled with water, where steam is injected at a pressure of 0,3 MPa. The maximum steam pressure of the unit is 0,3 MPa which is regulated by a safety valve. The working temperature is regulated automatically and can reach a maximum temperature of 95°С max . As an option there is a possibility to feed clean steam of 0,2 MPa directly into the unit in order to speed up the process and to control the water content. The maximum steam pressure of the unit 0,2 MPa, which is regulated by a safety valve.
Homogenisation of the mixture is carried out by a single or double knife installed in the centre at the bottom of the unit. Processing time is 10 to 20 min, depending on the heating method. The rotation frequency is slowly regulated at between 1 500 and 3 000 min ⁻¹.
A mixer for additional intensive homogenization of the product is installed on the top lid. It also cleans the inner walls during operation. The rotation frequency is slowly regulated at between 10 and 40 min⁻¹. DONI®Hotmix is equipped with a control panel which allows the programming of different recipes and controls all of the manufacturing parameters during processing.
A vacuum system may be supplied as an option.
