In the territory of Parma, headquarters of the European authority for the alimentary safety and core of the Italian Food Valley, our company engineers and manufactures machines and plants for the production of all types of alimentary pasta, from the more traditional type using durum wheat flour to the pasta produced with special flours, such as corn and rice flour.

Be it dry pasta, fresh pasta, filled pasta, thermally-treated pasta or pre-cooked pasta for ready meals nowadays all the pasta world has a precious point of reference in Italpast.

Starting from the eighties Italpast have reached many targets thanks to the results of their research: increase in production outputs, reduction in servicing costs, higher returns on investments, full functional capacity of use, sanitization, automation in processing.
From the “simplest” pasta machine to the more complex production line we process your project and raise a layout on the basis of your specific requirements, fully exploiting our know-how while drawing up the most differentiated production plants.

As to research and development of products typology and production process Italpast have co-operated with different companies and research institutes to create various labs for production of special pasta, i.e. “functional” pasta (gluten-free, with high protein contents) with a view to reducing to the minimum the processing impact on the raw materials and exploit their organoleptic and nutritional properties at the same time.

This machine is essential to first surface treatment of the product in order to avoid sticking and retain shape, brightness and colour. Suitable for short pasta, gnocchi, ravioli, tortellini and cappelletti. The different regulation systems which this machine is equipped with enable the highest versatility and use in all fresh or dry pasta production fields. Built in stainless steel with insulated panels, dismountable for easy cleaning and maintenance.

The first pre-drying phase is important to retain shape and colour of the product: this occurs thanks to correct ventilation and efficient heating device

All models are equipped with the following:

  • Regulation of treatment temperature and regulation of cycle duration
  • Linking ventilation flow with modular ventilation system hot/cold

  • Model for fresh pasta are completely washable.

Pasta machine complete with accumulating device Suitable for automation of the long, fresh pasta packaging phase Pasta machine running electro-pneumatically, suitable for automatic packaging of long pasta into bags or trays, to be included in fresh pasta production lines. Equipped with cross-cutting blade, width 600/1000 mms. depending on model, synchronized with the side sliding blocks for pasta accumulation. Ideal machine for continuous mixing and homogenization of the ingredients making up your dough
Essential for fitting onto continuous mixers to obtain high performances

ITALPAST has developed the concept of PRE-MIXER to amalgamate and homogeneously mix all ingredients making up the dough to reach even distribution of the liquids used to wet flour during the subsequent mixing phase. Besides improving the dough mixtures, something which has been tested first in our lab experimentally and then from a practical point of view during production, another great advantage of the pre-mixer T300 are functional capacity and efficiency while cleaning and sanitization operations are carried out.

Machine entirely built in stainless steel, equipped with the following devices:

  • Flour collection hopper complete with safety levels and beater
  • Volumetric doser of flour by precision endless screw in stainless steel
  • Volumetric dosage of water/liquids
  • Pre-mixing cylinder with transfer endless screw, fully dismountable for washing
  • Main cylinder for centrifuge mixing complete with shaft equipped with blades that are dismountable for washing

All models can be equipped with sequential programmer (PLC) for accurate and precise control of the drying cycle, thus enabling use of the ideal programs/settings already stored, which you can customize. 

Also, a panel-fitted printer can be supplied to record cycle execution.
The drying chambers are made up of dismountable panelling in zinc, pre-lacquered sheet/panel, protected by high-density cofferdam insulation in polyurethane, thickness mms. 60, ensuring correct running up to a maximum temperature of 70°C.

Stainless steel version available

Suitable for continuous productions; fully automatic running controlled by PLC with relevant keyboard enables moulding of nests of the desired dimensions, shapes and lengths, as well as lasagne, automatically spread onto the drying looms and obtained either from laminated sheet pasta or from a pasta die; width of sheet mms. 510 (upon demand up to mms. 540).

Upon demand the machine can be equipped with the following:

  • Laminating unit for adjustment of sheet-pasta thickness, made up of couple of chromed, ground rollers
  • Automatic loom-feeding device featuring output of 8 pcs. looms cms. 60x120 with automatic loom-forwarding
  • Loom support after moulding, equipped with pre-drying fans
  • Equipped with electronic speed variator suitable for direct coupling with sheeter or extruder.

  • Interchangeable cutting groups
  • Pneumatic system of tube lifting for nest moulding of various sizes (upon demand)
  • Cross cutting group made up of temporised blade for determination of tagliatelle length, synchronised with loom-forwarding device.

  • Longitudinal cutting group made up of adjustable-position rotative blades for determination of lasagna width and side trimming
  • Cross cutting group made up of temporised blade for determination of lasagne length, synchronized with loom-forwarding device.

Equipment supplied upon demand:

  • Special version with expanding cone for production of flat-, round-, oval-, waved-section nests (e.g. “reginette”) obtained from pasta die
  • Special version in stainless steel with direct discharge onto the pasteuriser net for production of fresh, nest-shaped “tagliatelle”.

Automatic sheeter to continuously feed moulding machines of ravioli and cappelletti and automatic cutting machines

The machine has been designed and manufactured to continuously feed the ravioli and cappelletti and cutting machines. The rolling shafts and cylinders are set horizontally. The particular opening of the shutters allow an accurate cleaning process of the inside parts that can be carried out in maximum safety conditions for the operator. The laminating-shaft group is equipped with distanced mechanics. All parts in contact with the product are in stainless steel AISI 304.

The double-basin model operates autonomously, since it is equipped with mixing basin of various capacities dependig on the model.
Transfer of the dough from the upper to the lower basin occurs thanks to a pneumatic tilting device.

Also a single-basin model is available, ideal for coupling with a continuous mixer and to be part of continuous production lines.

Output over 300 Kgs per hour

Small pasta line by exceptional performances, considering high output of well over 300 Kgs per hour, and extreme flexibility (several diameters and lengths can be produced): furthermore, the pasta extruder can be used to produce short, long and sheet pasta.
Prices are extremely low thanks to simple manufacturing.

This pasta equipment is composed of the following:

  • 1 pc. extruder mod. MAC 100 VR equipped with speed variator;
  • 1pc. filling-feeding pump with speed variator for quantity dosage, fully dismountable and washable;
  • 1 pc. star-shaped die, fully dismountable and washable composed of interchangeable inserts for cannelloni, max. diameter 40 mms., min. diameter 18 mms.;
  • 1 pc. pneumatic-, guillotine cutting device composed of 2 off conveyor mats with adjustable speed and height. This device can be fitted in front of the pasta die or after the Pasteurizer or Cooker.

Automatic machine that can be fed with sheet pasta obtained by sheeter or by extruder

Automatic machine suitable for the production of double-sheet ravioli, equipped with variator for continuous operation, reaching high performances

This machine can operate coupled with sheeters and/or in direct coupling with extruders.
By easily fitting the suitable moulds any shapes can be obtained: square, rectangular, round, half-moon and specialties such as “sebadas”, “empanada”, “pierogi” "dim-sam" or special sizes like fish, Christmas tree and many other shapes upon request.

As to filling dosage we recommend use of lobe pump mod. PL115 or similar, supplied separately: running is integrated in the production cycle of the ravioli machine. 

Entirely built in stainless steel all parts in contact with filling are dismountable and washable.
Electric plant, control panel and safety devices are to the EEC standards.

Sturdy construction, studied for production of double-sheet ravioli of any sizes and shapes on industrial scale

The machine is made up of four independent units:

  • Lamination group for sheet-pasta calibration
  • Structure in stainless steel AISI 304, independent motorization equipped with electronic speed variator.
  • Dosing group of filling made up of rotatory pump suitable for feeding of fillings of any consistence.
  • Moulding and cutting group of ravioli made up of structure entirely in stainless steel fitted upon wheels.

Modern, high-performing pasta machine for chilling ravioli and cappelletti Ideal for lowering temperature at core of the product
The product must be cooled after the pasteurization and drying phase and before packaging, so as to:

  • lower temperature at core of the product to avoid its remaining at a potentially risky bacteriological temperature;
  • avoid condensations and product sticking in the bag.

Made entirely in stainless steel, complete with insulated panels in polyurethane and survey doors. Easily accessible for washing operations. Modern, simple, high-performing pasta machine.

Dimensions change depending on the specific user’s requirements and on the available room. The conveyor belt can be in stainless steel with chain-driving system or sector-shaped, in white polypropylene, equipped with additional accumulation tier.

Each conveyor is controlled independently and equipped with speed variator. The freon cooling plant can be installed at a distance, while the evaporators are located on board of the machine for running with all types of cooling gases or glycoled water. 

Upon demand the machine can be equipped with special bars for automatic washing of belts and basins.

High performances ensured by reduced overall dimensions of the machine Pasteurization by overheated steam can be effected on two tiers, to which one or more drying tiers can be combined Particularly suitable for double-sheet ravioli requiring long treatment times
Pasta machine featuring new conception and high technology, ideal for large industries needing to exploit room in the best way possible in favour of high outputs. 

Running exclusively by overheated steam the pasta machine compact structure further improves the already proven efficiency of the SC models. From one up to three pre-drying tiers running by hot air can be added to the two pasteurization tiers, thus enabling to obtain final product ready for the cooling or packaging phase.

Output depends only on length of the pasteurization chamber (“L”) and on the kind of product to be treated: dimensions, thickness, total humidity. Due to the high temperature the belts dedicated to pasteurization are made up of stainless steel net and side driving chain. Belts in polyester net and side driving chains or sector-shaped belt in polypropylene are used in the drying area.

Pasta machine operating electro-pneumatically, engineered for automatic stacking of trays arriving from either a tray feeder, a nesting machine or a skein forming machine, onto the dryers trolleys, so as to reach maximum efficiency in production lines for short dry pasta and long pasta, either nested or skeined.
Equipped with innovative pneumatic system for trolley evacuation at the end of the loading cycle, system for tray handling through translation chains and guides for tray support enabling the stacker to operate even when the operator and/or the trolley is/are temporarily absent.
Structure and protection nets are made entirely in stainless steel.

Standard version complete with the following:

  • pneumatic piston for trolley evacuation and flashing light signal to draw the operator's attention;
  • possibility to use standard trays measuring 60x120 cm or 30x120 cm, up to 32 pcs trays per trolley;
  • stainless steel control panel, equipped with control, security and alarm devices controlled electronically by PLC.
