In the territory of Parma, headquarters of the European authority for the alimentary safety and core of the Italian Food Valley, our company engineers and manufactures machines and plants for the production of all types of alimentary pasta, from the more traditional type using durum wheat flour to the pasta produced with special flours, such as corn and rice flour.

Be it dry pasta, fresh pasta, filled pasta, thermally-treated pasta or pre-cooked pasta for ready meals nowadays all the pasta world has a precious point of reference in Italpast.

Starting from the eighties Italpast have reached many targets thanks to the results of their research: increase in production outputs, reduction in servicing costs, higher returns on investments, full functional capacity of use, sanitization, automation in processing.

As to research and development of products typology and production process Italpast have co-operated with different companies and research institutes to create various labs for production of special pasta, i.e. “functional” pasta (gluten-free, with high protein contents) with a view to reducing to the minimum the processing impact on the raw materials and exploit their organoleptic and nutritional properties at the same time.

Machines suitable for washing of round pasta dies up to 400mm diameter by means of a high-pressure water jet. Entirely made in stainless steel 304 they are equipped with the following devices:

  • Airtight washing chamber inside which the pasta die is fitted leaning on suitable rollers that make it turn while washing is in progress
  • Closure lid equipped with safety sensor stopping the pump in case of opening
  • Adjustable stroke, oscillating washing ramps, equipped with interchangeable nozzles in stainless steel, suitable for high pressures
  • Collection basin of the washing water, capacity 160 lt. equipped with drawer-shaped filter
  • Electric control panel on board of the machine complete with control console in stainless steel, equipped with timer for regulation of the washing cycle
  • Piston pump group suitable for high pressure equipped with pressure regulator, complete with all safety devices and connection to the washing chamber and to the water recirculation basin.

The consolidated experiences with models MAC-600 were renovated together with the patented centrifugal pre-mixing technology. The result is this more than 300/400/600 kgs per hour producing unit, which is continuous and producing superior quality pasta (short, long or sheet pasta). 
The MAC-600 VRC version is suitable for production of short pasta with round vertical head. 
The MAC-600 VRL version is suitable for production of long pasta with linear head to be combined with automatic spreading machines, nesting machines, lasagne machines, etc. Made in stainless steel these extruders are to the international standards.

Pasta machine functioning electro-pneumatically for automatic cutting and stacking of fresh lasagne Equipped with cutting groups this machine is also used as cutter - sheet-cutter for tagliatelle and long pasta

  • The lasagne machine-cutting machine is suitable for automatic production lines of fresh pasta obtained either from sheet or from pasta die.
  • This pasta machine can operate in two modes, lasagne or tagliatelle, and is made up of a conveyor belt for sheet pasta or for long pasta, a cutting group for tagliatelle, a cross-cutting group (or guillotine) and a unit for lasagne stacking.
  • The PLC-equipped electric control panel automatically controls machine operation in the two running modes.

Lasagna mode

  • Featuring automatic stacking device for lasagne sheets to be packaged in trays.
  • A piece-counting device enables to stack the desired quantity of pasta sheets and then discharge them onto a conveyor belt located underneath.
  • A version is available equipped with suitable device to put a sheet of paper between each sheet of pasta.

Tagliatelli and other shape of long-cut pasta mode:

Featuring interchangeable cutting groups and pneumatic cross-cut to determine cutting length and relative weight.

To obtain fully automated, continuous production we have engineered this Extruder equipped with Centrifuge Pre-Mixer

Pasta machine engineered on the basis of the consolidated experience and reliability of model MAC 100 - MAC 180, onto which a centrifuge pre-mixer of new conception has been fitted so as to obtain fully automated, continuous production. The pre-mixer enables homogeneous mixing of all ingredients making up the dough, which then undergoes hydration and extrusion. Particularly suitable for production of superior quality pasta, to be part of production lines for short and long pasta.

The models equipped with speed variator are especially suitable for production of sheet pasta in direct coupling with forming machines for ravioli, cappelletti, etc.
Model MAC120C-200 is equipped with head suitable for pasta die diam. 200, pressure control device and electronic speed variator for the extrusion screw.

Model equipped with the following:

  • structure entirely made in stainless steel;
  • volumetric doser for flour;
  • dosing pump for liquids;
  • centrifuge pre-mixer with dismountable blades;
  • extrusion cylinder with cofferdam for water cooling;
  • adjustable speed pasta-cutting unit with relevant knives.

Our company propose a new technological solution: looms featuring light alloy profiles in anodized aluminium and heat-resistant, polyester meshed-net, suitable for any kinds of static drying of products to be dehydrated, such as fruit, vegetables and, of course, pasta. Automatic machine for the production of fresh pasta of the short-cut, ravioli, tagliatelle and lasagna type. Automatic, patented machine for the production of all pasta shapes.

  • EXTRUDED: spaghetti, macaroni, fusilli, penne and other shapes.
  • RAVIOLI: double-sheet ravioli, different shapes, produced one-by-one.
  • TAGLIATELLE: this machine also produces tagliatelle, sheet-pasta for lasagna, “quadrucci” (pasta in square shape), “tagliolini”, “spaghetti alla chitarra”; thanks to a 4-position mould various cuts can be chosen. Thickness and length are adjustable.

The machine can be equipped with single or double mixing basin, suitable for production of medium quantities of filled pasta, extruded pasta, tagliatelle and sheet pasta for lasagna production. Most suitable for pasta shops, labs, restaurants, supermarkets, etc. Manufactured with high quality materials this machine enables production of many kinds of pasta by simply changing the relevant moulds. Simple construction enables also easy disassembly of all parts for full cleaning. All parts in contact with pasta and filling are in stainless steel and material suitable for contact with foodstuff. Exact answer to all experimental tests in labs of medium and large industries. Here are some examples of checks and applications:

  • testing hydration of flours depending on different recipes, temperatures and speeds;
  • test of raw materials such as eggs, powders, additives, flavours, etc.;
  • hold test for the mechanical parts depending on temperatures, pressures, etc.;
  • testing new dies, new pasta shapes.

The Extruder can simulate and detect any details concerning the following phases:

  • MIXING AND HYDRATION OF THE RAW MATERIALS with control of temperature of dough  thanks to independent thermostatation circuit, control of mixing shaft speed (completely dismountable for cleaning and washing operations).
  • COMPRESSION by single-screw group in stainless steel, independent thermostatation circuit of the extrusion cylinder, independent thermostatation circuit of the extrusion head, control of compression screw speed, control of pressure inside the extrusion head.

The new series of Extruders model MAC4000 has been engineered and manufactured by highly technological series equipment, thus being particularly suitable for the production of special shapes of high quality pasta. The fully automatic and independent Extruder is equipped with all components required for running on board of the machine, among which Cooling plant by closed-loop temperature-control system, vacuum pump and electric control panel. The Extruders are equipped with reliable and modern components connected to a running-friendly electronics but they also keep all those traditional processes unchanged that enable to obtain really high quality product. This can be obtained thanks to use of a proper and exclusive, patented Centrifuge pre-mixer, double mixing basin enabling sufficient hydration times and compression screw made by variable geometry, special profiling.

Technical data:

  • Patented centrifuge pre-mixer mod. T600;
  • PLC for accurate control of raw materials dosing devices, setting of recipes and production lots;
  • N.2 working stations equipped with “soft touch” panels at the operator’s disposal for total control of the Extruder functions (dosages, speeds, levels, alarms, safety);

Ideal machine to shape and select grated pasta, soup pasta, cous-cous. Built entirely in stainless steel this pasta machine is suitable for shaping and selecting small grated pasta, soup pasta, cous-cous.
Operating cycle includes three phases: dough feeding, production shaping and selection.

The shaping centrifuge determines dimensions of the product and is made up of feeding endless screw, knives and interchangeable grid (diameters 6-8-10 mms) which is the same as used for all models. The selection (or sifting) phase separates the final product from the one to be recycled, thus determining actual output of the machine, which decreases the more the machine carries out accurate selection.

Model GR600 can receive up to 400 Kgs per hour approx., and is made up of the following:

  • hopper for receiving dough, which can be adapted to various models of mixer or extruder, equipped with grating and security micro switch;
  • forming centrifuge;
  • vibrating sifting device diam. 600 mm. composed of 1 pc shaping plane (diameters available 2,5 - 3 - 4 mms.) and 1 pc recover plane with pneumatic transfer of the product to the mixer.

Shaping unit for filled cannelloni obtained from pre-cooked sheet pasta
High performances by output of over 15000 pcs per hour

The sheet pasta for production of pre-cooked cannelloni, obtained from automatic, continuous sheeter, is placed onto the calibrator feeding the cooker, which can process sheet pasta featuring 500 mm, in width and changeable thickness depending on our customer's requests. After cooking the sheet pasta is fed into a cooking/washing basin to remove surface starch, then it is transferred to a conveyor belt equipped with proper devices to shape and cut the filled cannelloni.

The equipment for shaping of pre-cooked cannelloni obtained from sheet pasta is composed of the following:

  • conveyor belt for pre-cooked pasta usable width 600 mms., made in stainless steel with belt in polyurethane, equipped with electronic speed variator;
  • knife group for longitudinal cut of sheet pasta;
  • filling doser from 3 up to 8 parallel cannelloni depending on size and width of the pre-cooked sheet pasta. Fully dismountable and washable, suitable for coupling with the dosing pump;
  • shaping/roll up device of cannelloni;
  • pneumatic device for guillotine-cutting of filled cannelloni;
  • conveyor belt for cannelloni, usable width 600 mms., length 2000 mms. approx.;
  • electric control panel featuring PLC system and touch-screen, made in stainless steel casing IP65, comprising control devices for conveyor belts speed and regulation of cutting length of cannelloni by timer or encoder (at choice);
  • machine running electro-pneumatically, fully in stainless steel, enabling full washing and sanitization.

Front delivery automatic sheeter to continuously feed one or two moulding machines

The machine has been designed and manufactured to continuously and simultaneously feed two ravioli and cappelletti machines or a double-sheet ravioli machine.

The sheeter can also operate by one exit because it is equipped with two independent motorization systems.
The rolling shafts and cylinders are fitted horizontally.

The particular opening of the shutters enables careful cleaning of the internal parts, carried out under the maximum safety conditions for the operator. 
The laminating-shaft group is equipped with distanced mechanics.
