In the territory of Parma, headquarters of the European authority for the alimentary safety and core of the Italian Food Valley, our company engineers and manufactures machines and plants for the production of all types of alimentary pasta, from the more traditional type using durum wheat flour to the pasta produced with special flours, such as corn and rice flour.

Be it dry pasta, fresh pasta, filled pasta, thermally-treated pasta or pre-cooked pasta for ready meals nowadays all the pasta world has a precious point of reference in Italpast.

Starting from the eighties Italpast have reached many targets thanks to the results of their research: increase in production outputs, reduction in servicing costs, higher returns on investments, full functional capacity of use, sanitization, automation in processing.
From the “simplest” pasta machine to the more complex production line we process your project and raise a layout on the basis of your specific requirements, fully exploiting our know-how while drawing up the most differentiated production plants.

As to research and development of products typology and production process Italpast have co-operated with different companies and research institutes to create various labs for production of special pasta, i.e. “functional” pasta (gluten-free, with high protein contents) with a view to reducing to the minimum the processing impact on the raw materials and exploit their organoleptic and nutritional properties at the same time.

Our company propose a new technological solution: looms featuring light alloy profiles in anodized aluminium and heat-resistant, polyester meshed-net, suitable for any kinds of static drying of products to be dehydrated, such as fruit, vegetables and, of course, pasta. These looms are used for any kind of handling, either manual or automatic thanks to their sturdiness and non-deformability.

Treatment is effected by means of "microperforated plates" device ensuring maximum penetration of heat and treatment homogeneity. High performance and energy-saving are ensured by innovative design and excellent insulation

Entirely made in stainless steel, fully dismountable for easy internal cleaning to ensure absolute hygiene. The 6-cm. thick, stainless steel panelling is thermally insulated, ensuring maximum thermal insulation to avoid heating up of the working environment, energy saving and total safety for the operators. 

The pasteurization treatment is obtained by means of the revolutionary system of “MICROPERFORATED PLATES” located above the pasteurizer that uniformly envelop the product in a jet of steam, ensuring maximum heat penetration and omogeneity of treatment.
This pasta machine can operate either with saturated or overheated steam. 

  • The saturated steam supplied by an external generator performs traditional pasteurization and constant treatment temperature ensures even pasteurization without condensations.
  • Operating by overheated steam, this machine is the ideal choice for a modern company, sensitive to those hygienical and safety regulations, which make the difference today. Pasteurization is effected by an air/steam mixture overhated up to over 300°C while temperature inside the pasteurization chamber reaches over 100°C. This new technology enables to reach 80-90°C at core of the product in a very short time while keeping its organoleptic qualities unchanged.
  • Thus the product remains stable and dry. Output depends on length of the pasteurization chamber, type of steam used and type of product to be treated: size, thickness, total umidity.

Available customizations:

  • Belt in special polyester net suitable for high temperatures, used to avoid leaving those marks on the product surface which remain when using stainless steel net.

Pasta machine built in stainless steel, equipped with water heating system by means of heat exchanger.

Scope of the heat exchanger working at 6 Bar saturated steam is to ensure constant and homogeneous cooking temperature inside the basin well over 98°C, so as to avoid fitting of internal coils, which could make it difficult to carry out washing operations at the end of the working day.

  • Suitable for cooking of bulk products, short pasta, ravioli, tortellini, spaghetti, etc. as well as sheet pasta for lasagne and cannelloni. Equipped with a conveyor belt made in alimentary polypropylene and stainless steel, running in two modes: impulse running for bulk products; continuous running for sheet pasta with automatic increase of water-level..
  • All the machines can be equipped with automatic device for lid lifting and conveyor mat.
  • The PLC fitted on the control panel equipped with software program studied by ITALPAST enables total control of the machine, automatically regulating cooking time, speed, water-levels and synchronization with the conveyor belts or the machinery that might be placed before/after the cooker.

Continuous mixing of alimentary pasta predisposed for equipped with centrifuge pre-mixer

Suitable for continuous preparation and hydration of alimentary pasta used for production of the following special regional pasta s.a zhaima (jaima) lasagna, kespe.

They are generally used in continuous production lines with possibility to feed the dough automatically up to 8 stations thanks to proper conveyor belts or shuttle-system for delivery pasta batch to other units.
